Healthy Sticky Hawaiian Chicken
I'm no great photographer but this does taste pretty amazing.
3 Chicken breast or Quorn Strips (depending on how many adults there are)
1 can of Pineapple (in Juice)
1 tbsp Tomato Puree
1 tbsp Honey
2-3 tbsp Soy sauce or Tamari (GF Soy Sauce)
2 garlic cloves
1" ginger (grated)
pinch of chilli seeds or Sriacha (for a little heat)
250ml of Water
Corriander for granish
White boiled rice
Method - serves 4
Chop the chicken into chunks and add the cornflour to a bowl. Coat the chicken in the cornflour and cook in the oven (until cooked through).
Mix the soy sauce, tomato puree and the juice from the tin of pineapple together, add the honey - make sure everything mixes well.
Cut the peppers, carrots and onions into matchsticks or chunks whichever you prefer, chop the garlic and grate the ginger. Add some water to a Wok or frying pan and cook the veg;
Add the tomato puree mix to the pan with the vegetables and cook to a boil; add the water and simmer on a low heat until the sauce thickens (you can add a little cornflour if it is too thin)
Cook your rice
When the chicken is cooked add to the sauce.
Serve over the rice and garnish with coriander and enjoy!
